Refreshing Recipe | Mint with Rice



That was on a lazy day with no interest for cooking…. And also I was not ready to go out for grocery in this heat. What I could easily make? All these I was thinking as I opened the fridge. Then I saw some pudina and dahi and cucumber. So thought of making pudina rice. Perfect try on a sluggish day, make raita to complete the meal..Lets Try ..



Ingredients :
Basmati rice- 1 cup
Ghee/oil- 2 tbsp
Cashew nuts-4/5
Cinnamon stick-1/2 inch
Elaichi-2
Onion chopped 1
Garam Masala- ½ tbsp
Pudina 1 bunch
Green chillies 2
Garlic cloves- 2/3   
Ginger
Whole jeera ¾ tbsp
Red chilli Powder- ½ tbsp
Lemon juice- 1 tbsp

How to make:
Soak the rice for 20 mins. Wash it make the rice. Put together in mixer and make a paste of Pudina , ginger, garlic and green chili. Put ghee / oil in pan. Fry Cashewnuts , Cinnamon stick, Elaichi and bay leaf for 2 mins. When the aroma comes out fry chopped onion. Put garam masala powder. Add the pudina paste and sauté for 5 mins. Add the cooked rice and mixed it well. Mix the lemon juice and serve it with the combination of Raita and Papad.
