A match made in heaven! Spicy Mutton and Potato Stew

What can be better in lunch / dinner than a steaming pot of mutton with potatoes in a rich and spicy gravy floating in the whole house with its bold flavours !
Nothing brings more comfort to the taste buds than the piping hot-pot of stewed mutton with chunks of potatoes. Some people do not like potatoes in mutton but for me, a match made in heaven ! So here I present – a hearty and comfort food aloo mutton spicy curry which when rendition into English becomes potatoes and lamb stew or curry but stew is more milder a word which may be doesn’t suit this dish BOLD , ROBUST and RUSTIC that’s how I will describe it. Serve it with roti or rice and you will forget everything else !

Mutton 1 kg

2 large onions finely chopped

2 bay leaves

Fresh green chilies seeded and finely chopped

Garlic cloves finely chopped

ground coriander, cumin powder , turmeric and chilli powder

2 tomatoes peeled and chopped

2 ½ cup of hot water

2 big potatoes cut in large chunks

Chopped fresh coriander to garnish

Process :

Heat oil in a large pan, fry the onion, bay leaves chilli garlic

Add the meat and cook for about 6-8 mins until lightly browned

Add the spices and salt and cook , stirring all the time to prevent spices from sticking to the bottom of pan.

Add tomatoes, and hot water, bring it to boil and let the mutton soft.

Add the bitesize potato chunks and cook until the potatoes and meat both are tender. The excess juices have been absorbed leaving a thick bit minimal sauce. Garnish with chopped fresh coriander.

Tips : Instead of water use chicken stock for more taste.
