Melt in Mouth- Steamed Sandesh

For Bengalis, any celebration is incomplete without the customary 'sandesh' (a sweet dish made from cheese cottage and sugar).

“Bhapa Sandesh” can be made easily and quickly so if you have some extra milk at home and you are craving for some sweet then you should go for it. It does not need any fancy ingredient or elaborate procedure to make this. If you prefer you can add some food color or kesar to make it more flavorful (as I added in the following recipe)


Chhana (made from 1/2 gallon of milk)

Powdered Sugar (3/4 cup, or to taste)

Small Cardamom Powder (1 tsp)
Kesar strings
1 small spoon rose water


-Make fresh Chhana from 1/2 gallon of milk and press it with something heavy for 45 minutes, so that all the water comes out.

-In a large bowl, add sugar and chhana and start mashing it with your hands until smooth ball is formed. The heat from your hand will help it in becoming soft and smooth, which is very important since we are not cooking anything.

-Now add and cardamom powder, Rose water and kesar strings. Mix well with hands.

-Brush a steel tiffin box with little bit of ghee. Place the chhana dough properly, flatten it.

-    In a heavy bottom pan bring water to boil, place the tiffin box for steaming. Do not cover and steam for 10 mins.
-    Take out from the pan. Let it be cool and cut into square pieces.
Your Steamed Sandesh is ready to serve
