My daughter loves to hook on chicken preparations any time any day. If chicken is there in menu I am sure no leftover would be there in her plate. So here is a chicken recipe "Chicken Bharta" which I made for dinner yesterday and it was delicious!
Boneless Chicken cooked in spices, onion, and tomato masala. Have it with roti , paratha , biriyani or even butter pao.
Chicken – 500 gms
Onions, finely chopped – 4-5 medium (make a paste with half chooped onion)
Tomato, finely chopped – 2 medium
Green chillies, finely chopped – to taste
Vinegar or lime juice – 1 tbsp
Ginger paste – 1 tsp
Garlic paste – 1 tsp
Salt – to taste
Red chilli powder – to taste
Coriander powder – 1 tbsp
Cumin powder – 1 tbsp
Tandoori masala – 1 tbsp (optional)
Oil – 2 tbsp
Cashew paste – 2 tbsp
Butter – 1 tbsp (optional)
Crèam – 2 tbsp
Cashew, finely chopped – for garnishing (optional)
Freshly chopped cilantro – for garnishing
You need to:
Cut boneless chicken into fine strips first and then cut each strip into small pieces or you could use chicken mince as well (that’s what I did). Marinate with Onion and ginger garlic paste, curd, vinegar or lime juice, coriender powder, cumin powder and Kashmiri mirch powder. Keep it for 2/3 hours in fridge. Heat oil + butter in a wok/Kadhai, On a medium flame, add add onions slices, saute for about 3/4 mins.
Add marinated chicken and cook covered for about 10 min, medium flame. Add chopped tomatoes, kasoori methi and slit green chilies. Mix well, cook covered until all the liquid evaporates and masala looks deeper reddish. Keep stirring once in a while. Add cashew paste and crèam. Adjust salt as per taste.
Cook for another 3 / 4 mins.
Garnish with fresh coriander, I added fresh green chilli for the color oomph! ;)
Serve with Chapatis/Parathas or butter Pav even.
